Gluten is a protein. It is found in foods processed from wheat and related grains such as barley and rye. It is what gives elasticity to dough and helps it rise and keep its shape.

Celiac disease. in short, triggers your immune system to overreact with strong antibodies.  Over time, the antibodies wear down the little hairs “also know as the villi” which line the walls of your intestine.  These “tiny hairs” is what absorbs nutrients as the food pass through into your digestive tract.  Celiac disease slowly destroys these villi, and eventually become less able to process the nutrition from food.

Wheat allergy is a little different and the same type of reaction that one would get from a peanut allergy or hay fever.
