Halloween Pumpkin Muffins
Ingredients
- 3-1/2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon vanilla
- 4 large eggs
- 1-1/2 cups sugar
- 1 cup oil
- 2 cups pumpkin
- 1 cup raisins or toasted oats (You can buy the toasted oats at the Peanut-Free store)
Instructions
- Preheat oven to 350 degrees. Butter a 3-inch muffin pan generously or place muffin papers each hole.
- In a mixing bowl, combine pumpkin, vanilla, eggs, oil and sugar.
- Sift flour, baking powder, soda, cinnamon and salt.
- Combine wet and dry ingredients together and beat until smooth.
- Add raisins.
- Pour batter into greased muffin tin or muffin papers, filling each cup 2/3 full.
- Bake for 30 minutes until lightly browned.
