Delicious Peanut Free Lemon Cupcakes

Ingredients

1Cupbutter or margarine, softened (unsalted preferred)
2CupSugar
3 Eggs
2Teaspoongrated lemon peel
1Teaspoonvanilla extract
3 1⁄2Cupall-purpose flour
1Teaspoonbaking soda
1⁄2Teaspoonbaking powder
1⁄2Teaspoonsalt
2Cupsour cream

Instructions

Preheat oven at 350 degrees. Grease or paper-line a muffin pan. Sift together flour, baking soda, and baking powder. Set aside. In a mixing bowl, beat together butter and sugar. Beat in eggs one at a time, making sure each is beaten thoroughly. Add the lemon peel and the vanilla. Add in dry ingredients, alternating with the sour cream. Batter will be thick. Fill the muffin pans so that they are about 1/4 cup full. Bake for about 25-30 minutes or until golden brown. Let cool for about 10 minutes.

FROSTING:

2 1/4 cups icing sugar
2 tablespoons lemon juice
3/4 teaspoon vanilla extract
1/4 teaspoon grated lemon peel
1 tablespoon milk

Cream butter and sugar in a small mixing bowl. Add lemon juice, vanilla, lemon peel and milk; beat until smooth. Decorate your cupcakes and enjoy!
